A very special lunch at CCEB

Students from the October ’18 Job Ready course put their kitchen hygiene, food and beverage service and payment handling theory to the test on Friday, when they produced a sit down, a la carte lunch for 16 guests.

Course teacher, Roger Phillips, said the transformation of the classroom into a restaurant was remarkable.

“Staff were blown away with the professionalism of the students and their attention to detail in making up the room and delivering the meals,” he said.

“The idea of getting hands on practice in plating, carrying and serving food came from feed back from past courses, so this time we built in quite a lot of practical work, including this exercise.”

The students loved the experience, with some working in the kitchen and others taking on the role of restaurant manager, head waiter and others doing general wait staff duties.

In the following weeks, students will swap roles so that they all experience the range of duties in food and beverage service.
